| A kitchen creation combining lemon, berries, whipped filling, and a buttery crunch.


Much like your favorite potluck desserts, such as Strawberry Pretzel Salad Dessert, this delicious combination of lemon, berries, and whipped topping layered on top of a buttery crust made with the all-familiar Ritz Crackers® leaves everyone wanting seconds!  I whipped this up as an experiment in a moment of craving something ‘whippy’ and delicious.  Pondering what to call this yummy creation, my husband and I had a couple of thoughts, such as, ‘Lemon Berry Goodness” or “Lemon Berry Delight” but then it hit me, “Berries on the Ritz!”  The nostalgic flavor of Ritz Crackers® from the golden, buttery crust really sang out!  With each sweet, bright, texture-filled taste, we concluded that we would certainly make this delicious dessert again… and again!   😊

 

Ingredients


  • 3 sleeves of Ritz Crackers®

  • 1/4 cup Butter, melted

  • 2 tablespoons Sugar (I tend to use Sugar in the Raw)

  • FILLING:

  • 1.5 cups Whipped Topping

  • 1/2 package (4 ounces) Cream Cheese, softened

  • 1/2 cup Sugar

  • 1 tsp Vanilla Extract

  • 1 tsp Lemon Extract

  • TOPPING:

  • 1 package (3 ounces) Lemon Gelatin

  • 1 cup Boiling Water

  • 1 package (16 ounces) Frozen Mixed Berries

  • Optional: Additional Whipped Topping and crushed Ritz Crackers

Directions

 

1.      Preheat the oven to 350°F. In a bowl, combine the crushed Ritz Crackers®, butter and sugar. Press the mixture into an ungreased 8x8-inch baking dish. Bake for 10 minutes. Cool on a wire rack.  

 

2.      In a small bowl or mixer (I’m still using a multi-generation-hand-me-down Kitchen Aid), beat the whipped topping, cream cheese, sugar, vanilla extract, and lemon extract until smooth. Spread the filling over the butter cracker crust. Refrigerate until chilled.

 

3.      Dissolve the lemon gelatin in boiling water in a large bowl. Stir in the mixed berries, then chill the gelatin topping in the fridge. (I use the quick method on the box, plus use frozen fruit when we want to enjoy this sooner rather than later. It works!)

 

4.      After the gelatin topping has chilled in the fridge until partially set, carefully spoon it over the filling in the 8x8-inch dish.

 

5.      Chill the Berries on the Ritz Dessert until firm, for four to six hours (quick method is ready in one to two hours).

 

6.      Cut the Berries on the Ritz Dessert into squares. Serve with additional whipped topping and additional butter cracker crumbles if desired.
