Ingredients:


  • ½ cup unsalted butter, softened

  • 2/3 cup granulated sugar (substitute as preferred – monk fruit, brown, etc.)

  • 2 large eggs

  • 2 tablespoons buttermilk

  • 3 ripe bananas (the riper, the better)

  • 1 teaspoon pure vanilla extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon nutmeg

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon fine salt

  • ½ cup chopped pecans

  • 1 cup semisweet chocolate chips


Directions:


  1. Preheat oven to 350˚F.

  2. Butter and flour a 9”x5” bread loaf pan.

  3. In a mixing bowl, cream together ½ cup softened butter, buttermilk, and 2/3 cup sugar. Add the eggs and whisk until thoroughly mixed.

  4. Mash bananas with a fork until consistency of chunky applesauce.

  5. Add mashed bananas to the mixing bowl along with vanilla extract, cinnamon and nutmeg. Mix until evenly blended.

  6. In a separate bowl, whisk together flour, baking soda and salt.

  7. Add the dry ingredients to the mixing bowl and stir until well mixed.

  8. Fold in ¾ cup chocolate chips and pecan pieces, then transfer mixture to a prepared bread pan.

  9. Sprinkle remaining ¼ cup chocolate over the top.

  10. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.

  11. Let banana bread rest for 10 minutes before transferring to a wire rack to cool.

  12. Enjoy!


    * Tip – This recipe works with replacing bananas for pumpkin puree! Want an extra moist bread? Stir in a heaping tablespoon (us country folk call it a dollop) of sour cream or Greek yogurt.

 

As always, served with a cup of fresh, hot coffee or cozy tea. Yummy!
