One of the easiest dishes I have ever thrown together!

A friend of mine shared this recipe with me years ago just by saying, "Layer yellow squash, onions, and cheese, bake it at 375° until it's golden brown." That's it! So, for years, I have made this dish without a second thought! It is quick, easy, and of course, delicious! It is also worth stating, it is kid-approved! When my children were young, they gobbled it up with no complaints! I've always noticed that there is something about the way the cheese bakes in with the onions that gives this dish a scrumptious taste- especially if you use sharp cheddar. Yum!


You can keep this as simple as stated in the description above or you can add additional ingredients to heighten the taste. I will say from experience, the Easy as One, Two, Three Squash Casserole is tasty enough! For good measure (pun intended), I have put together both versions for you, below:


Easy as One, Two, Three Squash Casserole


Ingredients


  • 2 tbs Butter / 1/4 stick, sliced (pats of butter)

  • 4 Yellow Summer Squash - thinly sliced (optional, mix with 2 zucchini)

  • 1 Onion

  • 1 cup Sharp Cheddar Cheese - shredded

    - Optional - Loaded Version

  • 1 cup Sour Cream

  • 1 Egg - lightly beaten

  • 1 sleeve Butter Crackers - such as Ritz, crushed and divided


Directions


  1. Preheat to 375°F - Grease a 1qt baking dish

  2. Layer squash, onion, and cheese in baking dish, scattering pats of butter within. (Lightly salt and pepper if you wish.)

  3. At this point, the Easy as One, Two, Three much lighter version can go in the oven and bake for 20 to 25minutes, until top layer of cheese is lightly brown.

  4. For the loaded version, mix egg and sour cream and pour over the squash, onion and cheese mixture in the dish.

  5. Stir in half of the crushed crackers (reserve the other half for topping - mixed with 2 tbs of melted butter).

  6. Top with reserved crushed crackers and butter mixture, plus another sprinkle of cheese.

  7. Bake in preheated oven for 20 to 25 minutes, until top layer of cheese is lightly brown.
